  • Sugar 2 tablespoons
  • Salt 1 teaspoon
  • Assorted Sushi Fillings as desired
  • Sesame Seeds for garnish
  • Nori (Seaweed) thinly sliced for garnish
  • Soy Sauce for serving
  • Wasabi for serving
  • Pickled Ginger for serving

Prepare the sushi rice

Wash 2 cups of sushi rice thoroughly until the water runs clear. Cook the rice in a rice cooker or on the stovetop according to the package instructions. Once cooked, transfer the rice to a large mixing bowl and let it cool slightly.

Prepare the sushi fillings

While the rice is cooling, prepare your favorite sushi fillings. You can use ingredients like fresh sashimi, avocado, cucumber, carrots, and any other vegetables or seafood you love. Slice them into thin strips or bite-sized pieces.

Mix the sushi rice with vinegar

In a small bowl, mix together 1/4 cup of rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt until the sugar and salt dissolve. Pour this mixture over the cooled sushi rice and gently fold it in with a wooden spoon or spatula until the rice is well coated.

Layer the sushi cake

Line the bottom of a round cake pan with plastic wrap. Place a layer of sushi rice at the bottom, pressing it down firmly. Add a layer of your sushi fillings on top of the rice, and then another layer of sushi rice. Repeat this process until all the ingredients are used up.

Chill and unmold the sushi cake

Cover the cake pan with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together and the sushi cake to set. Once chilled, carefully unmold the sushi cake onto a serving platter and remove the plastic wrap.

Garnish and serve

Now comes the fun part! Garnish your sushi cake with sesame seeds, thinly sliced nori, and any other toppings you desire. Use a sharp knife to slice the sushi cake into wedges and serve it up with soy sauce, wasabi, and pickled ginger. Enjoy!
