Take note
Baking bread can be addictive. May cause a house full of amazing aromas and uncontrollable urges to eat bread!
In a bowl, combine 100g of whole wheat flour and 100g of water. Stir it well until it forms a thick paste. Cover the bowl with a clean cloth and let it sit at room temperature for 24 hours. Don't worry, the wild yeast will start the fermentation magic!
Discard half of your sour starter and add 100g of whole wheat flour and 100g of water. Give it a good mix and cover the bowl again. Let this mixture sit for another 24 hours. Your friendly bacteria and wild yeast will be happy and ready to make your bread tangy!
In a large mixing bowl, combine 400g of bread flour, 100g of whole wheat flour, 10g of salt, and 300g of water. Add 200g of your active sour starter and mix everything until it forms a shaggy dough. Cover the bowl and let it rest for 30 minutes.
Sprinkle some flour on a clean countertop and transfer the dough onto it. Stretch and fold the dough over itself a few times, working it gently but firmly. Cover the dough with a cloth and let it rest for 30 minutes. Feel free to sing a song or have a mini dance party while you wait!
Shape the dough into a round loaf or any shape you desire. Place it on a baking tray lined with parchment paper. Cover it with a cloth and let it rise for 2-4 hours, or until it looks puffy and ready to go. Patience is a virtue, bread-making buddies!
Preheat your oven to 450°F (230°C) and place a baking dish with water at the bottom. This will create steam and give your bread a beautiful crust. Gently transfer your risen dough into the hot oven. Bake for 30-35 minutes, or until the crust is golden brown. Try not to drool during this step!
Once baked, remove the tangy sourdough bread from the oven and let it cool on a wire rack. Try to resist the urge to devour it immediately! Once it's cool enough, slice a piece, slather it with butter, and enjoy the tangy goodness you've created. Sharing is optional, but highly recommended!
