Prepare the sponge cake

Start by preheating your oven to 350°F (175°C). Then, grease and flour two 9-inch round cake pans. In a mixing bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt. In another bowl, cream together 1 cup of unsalted butter and 2 cups of granulated sugar until light and fluffy. Beat in 4 eggs, one at a time, and add 1 teaspoon of vanilla extract. Gradually add the dry ingredients to the butter mixture, alternating with 1 cup of milk. Mix until just combined. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before removing them from the pans.

Soak the sponge cake

Brew a strong cup of coffee and allow it to cool. Once the cakes are cooled, place one of the sponge cakes on a cake plate. Using a skewer, poke holes all over the cake. Slowly drizzle the cooled coffee over the cake, making sure to soak it evenly. Set aside the remaining coffee. Repeat with the second sponge cake.
