  • Almonds 1 cup
  • Dates 1 cup
  • Coconut oil 2 tablespoons
  • Cashews 2 cups (soaked overnight)
  • Coconut milk 1 cup
  • Maple syrup 1/2 cup
  • Lemon juice 1/4 cup
  • Vanilla extract 1 teaspoon
  • Mangoes 2 ripe

Prepare the crust

In a food processor, blend 1 cup of almonds, 1 cup of dates, and 2 tablespoons of coconut oil until you have a sticky mixture. Press this mixture firmly into the bottom of a lined springform pan to form the crust.

Make the cheesecake filling

Blend 2 cups of cashews (soaked overnight), 1 cup of coconut milk, 1/2 cup of maple syrup, 1/4 cup of lemon juice, and 1 teaspoon of vanilla extract in a high-speed blender until smooth and creamy. Pour the mixture over the crust in the springform pan.

Add the tropical twist

Slice 2 ripe mangoes and arrange them on top of the cheesecake filling. You can also add some sliced kiwis, pineapple chunks, or any other tropical fruit you desire!

Cover the springform pan with plastic wrap and place it in the refrigerator to chill for at least 4 hours, or until the cheesecake is set.
