CAUTION! This Raw Vegan Cheesecake is so incredible, you may never want to share it with anyone. Be warned, it's that good.
In a food processor, blend 1 cup of almonds, 1 cup of dates, and 2 tablespoons of coconut oil until you have a sticky mixture. Press this mixture firmly into the bottom of a lined springform pan to form the crust.
Blend 2 cups of cashews (soaked overnight), 1 cup of coconut milk, 1/2 cup of maple syrup, 1/4 cup of lemon juice, and 1 teaspoon of vanilla extract in a high-speed blender until smooth and creamy. Pour the mixture over the crust in the springform pan.
Slice 2 ripe mangoes and arrange them on top of the cheesecake filling. You can also add some sliced kiwis, pineapple chunks, or any other tropical fruit you desire!
Cover the springform pan with plastic wrap and place it in the refrigerator to chill for at least 4 hours, or until the cheesecake is set. Once chilled, remove from the refrigerator, carefully remove the springform pan, and slice into heavenly pieces. Enjoy your tropical paradise Raw Vegan Cheesecake!
