Preheat the oven

Preheat your oven to 350°F (175°C) to ensure it's nice and toasty for our Cheesecake Brownies.

Prepare the brownie batter

In a medium-sized bowl, melt 1 cup (225g) of butter and 1 ½ cups (300g) of chocolate chips together in the microwave. Stir until smooth and let it cool for a few minutes. In a separate bowl, beat 4 eggs, 1 ¼ cups (250g) of sugar, and 1 teaspoon of vanilla extract. Gradually add the melted chocolate mixture to the egg mixture, stirring until well combined. Finally, fold in 1 cup (125g) of all-purpose flour and a pinch of salt until just combined.

Prepare the cheesecake filling

In another bowl, beat 8 ounces (225g) of cream cheese and 1/3 cup (75g) of sugar until smooth. Add 1 egg and ½ teaspoon of vanilla extract, and continue beating until well combined.

Layer the batter and filling

Grease a 9x9-inch (23x23cm) baking pan and pour half of the brownie batter into the pan, spreading it evenly. Then, spoon dollops of the cheesecake filling on top of the brownie batter. Use a knife or toothpick to swirl the cheesecake filling into the brownie batter, creating a marbled effect. Finally, pour the remaining brownie batter over the top.

Bake and cool

Pop the pan into the preheated oven and bake for about 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remember, we want fudgy brownies, not dry ones! Once baked, remove the pan from the oven and let the brownies cool completely before cutting into squares and serving.
