Gather all your ingredients: 1 onion (finely chopped), 3 cloves of garlic (minced), 2 red chilies (deseeded and finely chopped), 1 thumb-sized piece of ginger (grated), 1 stalk of lemongrass (bruised and cut into 3 pieces), 1 can of coconut milk (400ml), 2 tablespoons of vegetable oil, 2 tablespoons of soy sauce, 1 tablespoon of tamarind paste, 1 tablespoon of brown sugar, 1 cinnamon stick, 3 cardamom pods (lightly crushed), 3 cloves, a pinch of salt, and a handful of fresh cilantro (for garnish).
In a large pan, heat the vegetable oil over medium heat. Add the chopped onion, garlic, chilies, ginger, lemongrass, cinnamon stick, cardamom pods, and cloves. Sauté for about 5 minutes, until the onion becomes translucent and fragrant.
Next, add your choice of vegetables to the pan. You can use a combination of your favorites, such as bell peppers, carrots, potatoes, and broccoli. Stir-fry for a few minutes until the vegetables are slightly tender.
Pour in the coconut milk, soy sauce, tamarind paste, brown sugar, and a pinch of salt. Stir well to combine all the flavors. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes. This will allow the sauce to thicken and the flavors to develop.
Once the sauce has thickened and the vegetables are fully cooked, remove the lemongrass stalks, cinnamon stick, and any whole spices. Taste and adjust the seasonings if needed. Garnish with fresh cilantro before serving.
