Start by peeling and chopping 2 large beetroot into small pieces. Make sure to wear gloves to avoid stained hands. Once chopped, put the beetroot in a blender or food processor and blend until smooth.
In a saucepan, combine 1 cup of sugar, 1 cup of water, and the blended beetroot. Bring the mixture to a boil over medium heat, stirring occasionally. Once it reaches a boil, reduce the heat and let it simmer for about 5 minutes.
Remove the saucepan from heat and let the mixture cool. Once cooled, transfer it to a container and refrigerate for at least 2 hours, or until completely chilled. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, you can transfer the mixture to a freezer-safe container and freeze for 2-4 hours, stirring every 30 minutes to prevent ice crystals from forming.
Once the sorbet reaches a scoopable consistency, transfer it to a container and store in the freezer until ready to serve. When you're ready to enjoy, scoop the vibrant beetroot sorbet into bowls or cones and serve it as a refreshing dessert. You can garnish it with fresh mint leaves or a sprinkle of powdered sugar if desired.
