To make our Coral-colored Carrot and Orange Sorbet, you'll need: 4 large carrots (peeled and chopped), 3 cups of freshly squeezed orange juice (about 6-8 oranges), 1/2 cup of granulated sugar, 1 tablespoon of fresh lemon juice, and a pinch of salt.
Take your chopped carrots and steam them until they become tender. Once cooked, let them cool down completely.
In a blender, add the steamed carrots, orange juice, sugar, lemon juice, and salt. Blend until smooth and well combined. Then, strain the mixture to remove any remaining solids.
Transfer the strained mixture into a container and place it in the refrigerator to chill for at least 2 hours. Once chilled, pour the mixture into an ice cream maker and follow the manufacturer's instructions to freeze it into sorbet.
Once the sorbet is ready, scoop it into bowls or cones, and experience the burst of citrus and vibrant color in every scoop! You can also garnish it with a sprig of fresh mint or a slice of orange for an extra touch.
