Start by washing and drying 3 cups of mixed berries. You can use a combination of blackberries, raspberries, and blueberries for a burst of color and flavor. Remove any stems or leaves and set the berries aside.
In a small bowl, mix together 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and a pinch of cayenne pepper. This blackened sugar blend will add a hint of warmth and spice to our cobbler.
In a mixing bowl, whisk together 1 cup of all-purpose flour, 1/2 cup of granulated sugar, 1 teaspoon of baking powder, and a pinch of salt. Then, add 1/2 cup of melted butter and 1/4 cup of bourbon. Stir until the batter is smooth and well combined.
Grease a baking dish with butter and place the mixed berries evenly on the bottom. Sprinkle the blackened sugar blend over the berries. Then, pour the batter over the berries, spreading it out to cover the surface.
Pop the baking dish into a preheated oven at 350°F (175°C) and bake for 35-40 minutes, or until the cobbler is golden brown and bubbling. Once out of the oven, let it cool for a few minutes. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
