Begin by preparing the luscious berry puree. In a blender, add a cup of mixed berries, such as strawberries, raspberries, and blueberries. Blend them until smooth and set the puree aside.
Pour one and a half cups of Prosecco into a saucepan and bring it to a gentle boil over medium heat. Let it simmer for a few minutes to burn off the alcohol and reduce its volume.
Next, slowly sprinkle in two tablespoons of powdered gelatin and half a cup of sugar into the simmering Prosecco. Stir gently until the gelatin and sugar dissolve completely and the mixture becomes smooth.
Remove the saucepan from the heat and stir in the berry puree you prepared earlier. Make sure it's thoroughly mixed so that every spoonful of jelly bursts with fruity goodness.
Pour the mixture into individual serving glasses or mold. Refrigerate them for at least four hours or until the jelly has set completely. The longer you let it chill, the firmer the jelly will be.
Once the jelly has set, it's time for the finishing touch! Decorate each serving with a few fresh berries and a sprig of mint. Now, sit back, relax, and enjoy this sparkling berry sensation.
