In a saucepan, pour 1 cup of Prosecco (save some for yourself!) and sprinkle 2 tablespoons of powdered gelatin on top. Let it sit for 5 minutes to allow the gelatin to bloom and get ready to set your jelly.
Once the gelatin is bloomed, heat the saucepan over medium heat. Stir gently until the gelatin dissolves completely and the mixture starts to bubble. This will take about 3-4 minutes, but remember not to let it boil vigorously.
Add 1/4 cup of sugar to the saucepan and stir until it completely dissolves. The sugar will add a touch of sweetness to balance out the bubbly goodness and make your jelly irresistible.
Squeeze the juice of half a lemon into the saucepan and stir it in. This citrusy addition will add a refreshing tang that pairs perfectly with the Prosecco. Trust us, it'll take your jelly to the next level!
Remove the saucepan from heat and let the mixture cool down slightly. Once it's reached room temperature, pour it into your desired jelly moulds or glasses. Pop them in the fridge and let them set for at least 4 hours, or overnight if you can resist the anticipation.
Once set, gently remove the jelly from the moulds or simply serve them in the glasses. You'll see the beautiful bubbles captured within, ready to delight your guests. Serve with a sprig of mint, if you're feeling fancy, and raise a toast to a sparkling start to the New Year!
