Start by boiling 2 cups of water. Once boiling, add 4 hibiscus tea bags and let it steep for 5 minutes. Remove the tea bags and set the brewed tea aside to cool.
In a small bowl, combine 1/2 cup of cold water with 2 packets of unflavored gelatin. Let it sit for 5 minutes, allowing the gelatin to soften and bloom.
In a saucepan, combine 1 cup of hibiscus tea, 1/2 cup of sugar, and a pinch of salt. Heat the mixture over low heat until the sugar dissolves completely. Remove from heat and stir in the bloomed gelatin until fully dissolved.
Gently fold in 1 cup of mixed berries into the hibiscus-gelatin mixture. You can use a variety of berries like strawberries, blueberries, and raspberries for a burst of summer goodness!
Pour the mixture into individual molds or a single large mold. Let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until set.
Once the gelées are set, unmold them onto dessert plates or bowls. Decorate with extra berries if desired. Grab a spoon and dive into the refreshing deliciousness!
