In a large mixing bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1 tablespoon of sugar, and a pinch of salt. Give it a gentle whisk to ensure everything is well incorporated.
In a small pot, heat 1 cup of water and 2 tablespoons of unsalted butter until the butter is melted and the water is just about to simmer. Remove from heat and add 1 teaspoon of vanilla extract. Slowly pour this magical liquid into the dry ingredients while stirring continuously until a smooth dough forms.
Fill a large saucepan or deep fryer with vegetable oil, at least 2 inches deep. Place it on medium heat and let the oil reach a temperature of 350°F (175°C). While waiting, transfer the dough into a piping bag fitted with a star-shaped nozzle. This is where the churros get their iconic ridges!
Once the oil is hot enough, carefully pipe 6-inch long strips of dough into the pan, using kitchen scissors or a knife to cut them off. Fry the churros for about 2-3 minutes on each side, or until they turn golden brown and crispy. Don't overcrowd the pan, work in batches if needed.
While the churros are still warm, roll them around in a mixture of 1/2 cup of granulated sugar and 1 tablespoon of ground cinnamon until fully coated. These heavenly treats are almost ready, but we can't forget the centaur caramel! Serve the churros with a bowl of warm caramel sauce on the side for dipping or drizzling.
