To create this modern twist on Christmas Pudding, you'll need the following ingredients: 200g of dried figs, 100g of dried cranberries, 100g of dried apricots, 100g of pitted dates, 200ml of brandy, 100g of breadcrumbs, 100g of ground almonds, 100g of brown sugar, 2 teaspoons of mixed spice, 2 eggs, 100g of melted butter, zest of 1 orange, and juice of 1 lemon.
Chop the dried figs, cranberries, apricots, and pitted dates into small pieces. Place them in a bowl and pour the brandy over the top. Let the fruits soak in the brandy overnight, or for at least 2-3 hours if you're short on time.
In a large mixing bowl, combine the soaked fruits, breadcrumbs, ground almonds, brown sugar, mixed spice, eggs, melted butter, orange zest, and lemon juice. Stir everything together until well combined.
Grease a 1.2-liter pudding basin with butter. Press a small disc of parchment paper onto the bottom of the basin to prevent sticking. This will make it easier to remove the pudding once it's done.
Pour the pudding mixture into the prepared basin, making sure to press it down firmly. Smooth the top with the back of a spoon to create an even surface.
Cover the pudding basin with a double layer of parchment paper, pleating it in the middle to allow room for expansion. Secure the paper with kitchen twine. Place the basin in a large saucepan and fill it halfway with boiling water. Cover the pan with a tight-fitting lid and let the pudding steam for 4 hours.
Remove the pudding basin from the saucepan and carefully remove the parchment paper. Invert the pudding onto a serving plate. Warm a small amount of brandy in a pan and carefully ignite it using a long match or a grill lighter. Pour the flaming brandy over the pudding, creating a dramatic effect. Be cautious and keep a fire extinguisher nearby, just in case!
