Calling all plant-based dessert lovers! Whip up a batch of vegan churro ice cream sandwiches that will leave everyone amazed. It's time to satisfy your sweet tooth the cruelty-free way!

In a saucepan, combine 1 cup of water, 2 tablespoons of vegan butter, 2 tablespoons of granulated sugar, and a pinch of salt. Bring the mixture to a boil over medium heat.
Once the water mixture is boiling, remove the pan from the heat and quickly stir in 1 cup of all-purpose flour. Mix until the dough comes together and forms a ball.
Heat vegetable oil in a deep pot or skillet over medium heat. Meanwhile, transfer the churro dough into a piping bag fitted with a star-shaped tip.
Pipe 4-5 inch strips of dough into the hot oil, carefully cutting them using a pair of kitchen scissors. Fry the churros until golden brown and crispy, then transfer them to a paper towel-lined plate to drain excess oil.
In a shallow bowl, combine 1/2 cup of granulated sugar and 2 teaspoons of ground cinnamon. Roll each churro in the cinnamon sugar mixture to coat it evenly.
Allow the churros to cool. Take your favorite vegan ice cream and place a scoop between two churros. Gently press the churros together to create a delicious ice cream sandwich.
