In a large mixing bowl, combine 1 cup of almond flour, 1 cup of unsweetened shredded coconut, 1/4 cup of pumpkin seeds, 1/4 cup of sunflower seeds, 1/4 cup of chopped almonds, 1/4 cup of chopped cashews, 1/4 cup of maple syrup, 2 tablespoons of coconut oil, 1 teaspoon of vanilla extract, and a pinch of salt. Mix everything together until well combined.
In a microwave-safe bowl, add 8 ounces of dark chocolate chips. Microwave in 30-second intervals, stirring each time, until the chocolate is fully melted and smooth.
Pour the melted chocolate over the prepared grain-free granola mixture. Gently fold the granola into the chocolate until all the granola pieces are coated.
Line a baking sheet with parchment paper. Spread the granola chocolate mixture onto the lined baking sheet, using a spatula to even it out. Place the baking sheet in the refrigerator and chill for at least 1 hour, or until the chocolate is firm.
Once the chocolate is firm, remove the baking sheet from the refrigerator. Break the granola chocolate into bark-like pieces using your hands or a knife.
