First, wash and pat dry 1 pound of fresh salmon. Remove the skin and bones, if any. Cut the salmon into small cubes, about half an inch in size.
In a bowl, combine the salmon cubes with 1/2 cup of diced tomatoes. Sprinkle 1/4 cup of finely chopped red onions and 1/4 cup of fresh cilantro over the salmon. Squeeze the juice of 1 lemon on top. Gently toss everything together to ensure the salmon is evenly coated. Cover the bowl and refrigerate for about 30 minutes to allow the flavors to meld together.
After the marinating time, take out the bowl from the refrigerator. Give it a quick stir before serving. Lomi-Lomi Salmon is best enjoyed chilled, so serve it with a side of steamed rice or as a topping on a bed of fresh salad greens. Garnish with some additional cilantro for an extra burst of flavor.
