Be careful while handling hot oil to avoid burns. Make sure the corn kernels are fully cooked before mixing them with other ingredients.
In a mixing bowl, combine 2 cups of cooked corn kernels, 1/2 cup of finely chopped red onion, 1/4 cup of chopped fresh cilantro, 1/2 cup of crumbled cojita cheese, 1/4 cup of all-purpose flour, 1 beaten egg, 1/2 teaspoon of cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of salt, and a squeeze of fresh lime juice. Mix everything together until well combined.
Heat about 1/4 inch of oil in a large frying pan over medium heat. Using your hands, form the corn mixture into small patties, about 2 inches in diameter. Gently place the patties into the hot oil and cook for about 2-3 minutes per side, or until golden brown and crispy. Use a spatula to carefully flip the fritters to cook the other side.
Once the fritters are cooked to perfection, remove them from the pan and place them on a paper towel-lined plate to drain any excess oil. Serve hot and garnish with additional crumbled cojita cheese and a sprinkle of chopped cilantro. These fritters are best enjoyed fresh off the stove, so dig in and savor the deliciousness!
