In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1/2 teaspoon of baking powder. Give it a good stir until well-mixed.
Make a well in the center of the dry ingredients. Pour in 1/4 cup of vegetable oil and 3/4 cup of warm water. Mix everything together until a dough forms.
Transfer the dough onto a clean, floured surface. Knead it for about 5 minutes until it becomes smooth and elastic. Feel the burn! Who needs a gym membership when you can make tortillas?
Place the dough back in the mixing bowl and cover it with a clean kitchen towel. Let it rest for 20 minutes. This is the dough's time to zen out and relax.
Divide the dough into 8 equal portions. Roll each portion into a ball and flatten it with your hands. Dust your rolling pin with flour and roll out each portion into a thin round tortilla. Size doesn't matter, as long as it tastes amazing!
Heat a skillet over medium-high heat. Make sure it's hot like the dance floor at a salsa party. No need to add any oil or butter to the pan.
Place a tortilla on the hot skillet and cook for about 30 seconds on each side. You'll see beautiful golden brown spots forming. Flip it like a pro! Repeat this step for all the tortillas, and stack them up on a plate.
