Be prepared for a bit of a messy process. Making croissants can be a labor of love, but trust me, the end result is totally worth it!
In a large mixing bowl, combine 2 and 1/2 cups of all-purpose flour, 2 tablespoons of sugar, 1 teaspoon of salt, and 1 tablespoon of instant yeast. Mix them all together until well combined.
Cut 1 cup of cold unsalted butter into small cubes. Add the butter cubes to the flour mixture and using your fingertips, gently rub the butter into the flour until you get a crumbly texture. Don't worry if there are still some visible butter pieces.
Create a well in the center of the mixture and pour in 1 cup of cold milk. Using a spoon or your hands, mix the dough until it starts to come together. Knead the dough gently on a lightly floured surface for about 5 minutes until smooth and elastic.
Roll out the dough into a rectangle about 1/4 inch thick. Cut the dough into small triangles, about 3 inches wide at the base. Starting from the base, roll each triangle tightly towards the tip to form the classic croissant shape. Place the mini croissants on a baking sheet lined with parchment paper, leaving some space in between.
Cover the mini croissants with a clean kitchen towel and let them rise in a warm place for about 1 hour, or until they double in size. Preheat your oven to 375°F (190°C). Brush the croissants with an egg wash (1 beaten egg and a splash of milk) for that golden-brown finish. Bake them in the preheated oven for 15-20 minutes, or until they turn golden brown and flaky.
Allow the mini croissants to cool for a few minutes, then serve them warm or at room temperature. These delightful treats are perfect on their own, but you can also pair them with butter, jam, or Nutella. Enjoy the irresistibly cute and buttery goodness!
