Gather all your ingredients: 2 cups of chopped clams, 4 slices of bacon (diced), 1 onion (chopped), 2 cloves of garlic (minced), 3 potatoes (diced), 2 cups of chicken broth, 1 cup of heavy cream, 2 tablespoons of butter, 1 bay leaf, 1 teaspoon of thyme, salt, and pepper.
In a large pot, cook the diced bacon over medium heat until it becomes crispy and golden brown. Remove the bacon with a slotted spoon and set it aside for later.
Using the leftover bacon grease in the pot, sauté the chopped onion and minced garlic until they become soft and translucent. This will infuse your chowder with incredible flavor!
Toss in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes or until the potatoes are tender. Now, your kitchen is starting to smell amazing!
Pour in the heavy cream and add the chopped clams. Stir everything together and let it simmer for a few more minutes until the chowder is creamy and thick. Don't forget to season with salt, pepper, thyme, and the bay leaf!
Finally, remove the bay leaf from your chowder and stir in the butter until it melts. Ladle the piping hot New England Clam Chowder into bowls and sprinkle the reserved crispy bacon on top for that extra crunch. Grab a spoon, dig in, and enjoy the taste of the coast!
