In a large bowl, mix together 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1 tablespoon of sugar. Cut 1/2 cup of chilled unsalted butter into small cubes and add it to the flour mixture. Rub the butter into the flour using your fingertips until the mixture resembles coarse crumbs. In a separate small bowl, dissolve 2 teaspoons of active dry yeast in 1/2 cup of warm water and let it sit for 5 minutes. Once the yeast is foamy, pour it into the flour mixture. Stir everything together until a soft dough forms.
Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour or until it has doubled in size. This is the perfect time to prepare the filling!
Start by finely chopping 1 large onion. In a pan over medium heat, cook 8 ounces of bacon until crispy. Remove the bacon from the pan and set aside. In the same pan with the bacon drippings, add the chopped onion and sauté until golden brown. Crumble the cooked bacon and add it back to the pan with the onion. Stir everything together and cook for an additional 2-3 minutes. Remove from heat and let it cool.
Once the dough has doubled in size, punch it down to release any air bubbles. Roll it out on a lightly floured surface into a rectangle about 1/4 inch thick. Cut the dough into rectangles of your desired size (approximately 3 x 4 inches). Place a spoonful of the bacon and onion filling onto one end of each rectangle. Fold the dough over the filling, pressing the edges to seal. Repeat until all the dough and filling are used.
Preheat your oven to 375°F (190°C). Place the filled rolls onto a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown. Once they are done, remove from the oven and let them cool slightly. Serve warm and enjoy these irresistible Latvian treats!
