Be careful not to eat all the dough before it turns into churros. We know it's tempting!
In a saucepan, heat 1 cup of water, 1/2 cup of unsalted butter, and 1/2 teaspoon of salt over medium heat. Once the butter has melted and the mixture starts to simmer, add 1 cup of all-purpose flour. Stir vigorously until the dough forms a ball and pulls away from the sides of the pan.
Remove the dough from the heat and let it cool for a few minutes. Then, beat in 3 eggs, one at a time, until fully incorporated. Stir in 1 cup of shredded cheddar cheese and 1/4 cup of grated Parmesan cheese. The dough should become smooth and cheesy.
Fill a large piping bag fitted with a star tip with the dough. Heat oil in a deep pot or skillet to 375°F (190°C). Pipe 4-inch long churros directly into the hot oil, cutting them with a pair of scissors. Fry until golden brown, about 3-4 minutes, flipping them halfway through. Remove from the oil and drain on paper towels.
