Prepare the Tomato Base

Heat olive oil in a large pan over medium heat. Add chopped onions and sauté until golden brown. Toss in minced garlic and cook for an additional minute. Now, it's time to add the star of the show - canned tomatoes! Pour them into the pan, crushing them gently with a fork. Season with salt, pepper, and a pinch of sugar. Let the mixture simmer for about 10 minutes, until it thickens slightly.

Add the Feta and Create Wells

Crumble the feta cheese over the tomato mixture, distributing it evenly. Use the back of a spoon to create small wells in the sauce. These wells are where the eggs will cook.

Crack and Cook the Eggs

Now, it's time for the eggs to join the party! Carefully crack them into the wells you created in the tomato and feta mixture. Cover the pan with a lid and let the eggs cook for about 5-7 minutes, until the whites are set but the yolks are still runny.
