Gather all the necessary ingredients for your Sushi Cupcakes. You'll need: rice cereal, marshmallows, butter, food coloring (green, red, and yellow), gummy worms, fruit roll-ups, and sprinkles.
In a microwave-safe bowl, melt the marshmallows and butter together in short bursts, stirring in between. Keep melting until you have a smooth and gooey mixture.
Divide the melted marshmallow mixture into three separate bowls. Add a few drops of green food coloring to one bowl, red to another, and yellow to the third bowl. Mix each bowl until the colors are well incorporated.
Take a small handful of the green marshmallow mixture and roll it into a ball. This will be your 'rice' base. Repeat with the red and yellow mixtures to create different 'flavored rice' bases.
Place each 'rice' base into a cupcake liner and press down gently to flatten it slightly. This will form the base of your Sushi Cupcakes.
Cut the fruit roll-ups into thin strips to resemble 'seaweed'. Wrap a strip of 'seaweed' around each rice base. Next, place a gummy worm on top of the 'seaweed' to resemble a 'fish' topping.
Add a sprinkle of your favorite toppings, like colorful sprinkles or edible glitter, to give your Sushi Cupcakes that extra touch. Serve them up and enjoy!
