Be careful not to overdo it with the thyme or tamarind. We want their flavors to shine, but not overpower the drink! Also, please drink responsibly and enjoy in moderation.
Pour 1 cup of water into a small saucepan and bring it to a gentle simmer. Add a handful of fresh thyme sprigs (about 8-10) and let them infuse for 10 minutes.
While the thyme is infusing, soak 2 tablespoons of tamarind pulp in 1/4 cup of warm water. Use your hands to squeeze and mash the pulp, extracting as much flavor as possible. Set aside.
After the thyme has infused for 10 minutes, strain the infused water into a bowl using a fine-mesh sieve or cheesecloth. Discard the thyme sprigs.
In a pitcher, combine the strained thyme-infused water, the tamarind pulp mixture, 2 tablespoons of honey, and the juice of 1 lemon. Stir well to incorporate all the flavors.
Pour the Thyme Tamarind Tonic into tall glasses filled with ice cubes. Garnish with a sprig of fresh thyme and a slice of lemon. Sip slowly and savor the tangy goodness!
