Be cautious while handling saffron as it has a strong color and flavor that can stain. Make sure to not add too much lemon juice as it can overpower the other flavors. This recipe contains sparkling water, so handle the bottle with care and open it slowly to avoid any fizzy eruptions.
In a small saucepan, combine 1 cup of water and 1 cup of sugar. Heat over medium heat until the sugar is completely dissolved. Remove from heat and add a pinch of saffron threads. Let it steep for 10-15 minutes until the syrup is infused with the saffron's vibrant color and aroma.
In a large pitcher, combine the juice of 8 fresh lemons and 1 tablespoon of lemon zest. Add the saffron syrup prepared in step 1 and stir well to incorporate all the flavors. Taste and adjust the sweetness if desired by adding more sugar or lemon juice.
