Collect 4 bone-in veal shanks, 1 cup of flour, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 2 tablespoons of olive oil, 1 medium onion (chopped), 2 medium carrots (chopped), 2 celery stalks (chopped), 4 cloves of garlic (minced), 1 cup of beef broth, 1 cup of dry white wine, 1 can of diced tomatoes (14 ounces), 1 bay leaf, and 2 sprigs of fresh thyme.
In a shallow dish, mix the flour, salt, and black pepper. Coat each veal shank in the flour mixture, shaking off any excess. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the veal shanks and brown them on all sides. This will give them a delicious caramelized flavor.
Transfer the browned veal shanks to your slow cooker. Add the chopped onion, carrots, celery, and minced garlic. Pour in the beef broth, white wine, diced tomatoes (with their juice), bay leaf, and thyme sprigs. Give it a gentle stir to mix everything together.
Cover the slow cooker and set it to cook on low heat for 6-8 hours or high heat for 3-4 hours. This slow cooking process will make the meat tender and allow the flavors to meld together.
Once the cooking time is up, remove the bay leaf and thyme sprigs. Serve the Osso Buco with creamy polenta or mashed potatoes. Don't forget to spoon some of that delicious sauce over the top. Sit back, relax, and savor the comfort!
