Rinse 1 cup of sticky rice with cold water until the water runs clear. Then, soak the rice in enough water to fully submerge it for at least 4 hours or overnight.
Drain the soaked rice and place it in a steamer lined with a muslin cloth or cheesecloth. Steam the rice over high heat for 20-25 minutes, or until it becomes tender and translucent.
In a saucepan, combine 1 cup of coconut milk, 1/2 cup of sugar, and a pinch of salt. Heat the mixture over medium heat, stirring constantly, until the sugar dissolves. Set aside.
Transfer the steamed sticky rice to a mixing bowl. Slowly pour the prepared coconut sauce over the rice, while gently folding it in with a wooden spoon or spatula. Let the rice absorb the sauce for about 10 minutes.
Choose a perfectly ripe mango and slice it into thin, delicate pieces. Set aside.
Place a generous portion of the coconut-infused sticky rice on a plate. Top it off with the freshly sliced mango. Drizzle some extra coconut sauce over the dish, if desired. Grab a spoon and dive in!
