Rinse 2 cups of sushi rice in a bowl until the water runs clear. Cook the rice according to the package instructions. Once cooked, let it cool for a few minutes.
While the rice is cooling, chop your favorite vegetables like cucumber, avocado, and bell peppers into thin strips. You can also use tofu or marinated tempeh as a protein option. Get creative with your filling choices!
Place a sheet of nori (seaweed) on a clean bamboo sushi mat. Wet your hands to prevent sticking, then spread a thin layer of cooled rice on the nori, leaving 1 inch at the top. Lay your desired fillings in a row near the bottom of the nori.
Using the sushi mat, roll the nori and fillings tightly away from you. Apply gentle pressure to ensure a compact roll. Moisten the top inch of an empty nori with water to seal the roll.
Using a sharp knife, slice the sushi roll into bite-sized pieces. Wipe the knife with a damp cloth between slices for cleaner cuts. Serve your vegan sushi with soy sauce, wasabi, and pickled ginger.
