In a large bowl, mix together the marinade ingredients: olive oil, lemon juice, garlic, oregano, salt, and pepper. Cut your choice of meat, such as chicken, pork or lamb, into bite-sized pieces and add them to the bowl. Toss well to coat the meat in the marinade. Cover the bowl with plastic wrap and let the meat marinate in the refrigerator for at least 1 hour, or overnight for best results.
While the meat is marinating, soak wooden skewers in water for about 30 minutes to prevent them from burning on the grill. If using metal skewers, skip this step. Once soaked, thread the marinated meat onto the skewers, alternating with pieces of bell peppers, onions, and cherry tomatoes for added flavor and color.
Fire up your grill to medium-high heat. If using a charcoal grill, wait until the coals have turned white before placing the skewers on the grill. This ensures an even cooking temperature. If using a gas grill, preheat for about 10 minutes with the lid closed.
Place the skewers on the preheated grill, making sure to leave some space between them for even cooking. Cook for 10-12 minutes, turning occasionally, until the meat is cooked through and nicely charred. Keep a close eye on the skewers to prevent burning.
Carefully remove the skewers from the grill and transfer them to a platter. Sprinkle with fresh lemon juice and garnish with chopped parsley. Serve the Greek Souvlaki alongside warm pita bread, tzatziki sauce, and a refreshing Greek salad. Enjoy the delicious flavors of Greece with your friends and family!
