In a bowl, combine 1 lb of cubed meat (pork or chicken), 1/4 cup of olive oil, 2 tablespoons of lemon juice, 2 minced garlic cloves, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and a pinch of black pepper. Allow the meat to marinate in the fridge for at least 2 hours or overnight if possible.
In another bowl, mix together 1/2 cup of Greek yogurt, 2 tablespoons of lemon juice, 1 minced garlic clove, 1 tablespoon of chopped fresh dill, and a pinch of salt. Stir well and refrigerate until ready to use.
Preheat your grill to medium-high heat. Thread the marinated meat onto skewers and grill for about 8-10 minutes, turning occasionally, until nicely charred and cooked through. Remove from the grill and let it rest for a few minutes.
Warm up some pita bread on the grill for a minute on each side. Then, spread a generous amount of the prepared sauce on the pita bread. Add the grilled meat, sliced tomatoes, diced onions, and some sliced cucumbers. Feel free to add olives, feta cheese, or any other toppings you prefer. Roll up the pita wrap tightly and secure it with toothpicks if needed.
Serve your delicious Greek Souvlaki pita wraps with a side of tzatziki sauce and some extra lemon wedges for squeezing. Get ready to taste the Mediterranean flavors and enjoy a true gyro experience!
