In a saucepan, combine 1 cup of quinoa with 2 cups of water and a pinch of salt. Bring it to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed. Once done, fluff it with a fork and set it aside to cool.
While the quinoa is cooling, chop 1 cucumber, 1 bell pepper, 1 red onion, and a handful of cherry tomatoes into bite-sized pieces. If you're feeling fancy, you can also dice a block of feta cheese.
In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, the juice of 1 lemon, 1 clove of minced garlic, 1 teaspoon of dried oregano, and a pinch of salt and pepper. Taste and adjust the seasoning as needed.
In a large mixing bowl, combine the cooked quinoa, chopped veggies, and dressing. Give it a good toss to make sure everything is well coated. If you're using feta cheese, gently fold it in at this stage.
Cover the bowl with plastic wrap and refrigerate the Greek quinoa salad for at least 30 minutes to allow the flavors to meld together. When you're ready to indulge, grab a fork and savor the fresh taste of Greece!
