Take note
Please note that hibiscus petals used in this recipe may stain surfaces and clothing. Handle with care!
In a small saucepan, combine 1 cup of water and 2 tablespoons of dried hibiscus petals. Bring to a simmer over medium heat and let it steep for 10 minutes. Strain the petals and set aside the hibiscus infusion to cool.
In a food processor, combine 2 cups of cooked chickpeas, 1/4 cup of tahini, 1/4 cup of lemon juice, 2 cloves of garlic, 2 tablespoons of olive oil, 1 teaspoon of cumin, and 1/2 teaspoon of salt. Add the cooled hibiscus infusion and blend until smooth.
Transfer the hibiscus hummus to a serving bowl and cover it with plastic wrap. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve with your favorite pita or vegetable sticks and garnish with a sprinkle of hibiscus petals for an extra pop of color.
