Pour 1 cup of boiling water over 2 tablespoons of dried hibiscus flowers. Let it steep for 10 minutes, then strain the tea and let it cool completely.
In a food processor, combine 2 cups of cooked chickpeas, 1/4 cup of tahini, 2 tablespoons of extra virgin olive oil, 2 cloves of garlic, juice of 1 lemon, and a pinch of salt. Blend until smooth.
Pour the cooled hibiscus tea into the hummus base. Start with 1/4 cup and adjust to your taste. Blend again until well incorporated.
Transfer the Hawaiian Hibiscus Hummus to a serving bowl. Drizzle some olive oil on top and sprinkle with chopped fresh parsley or cilantro. Serve with pita chips or fresh veggies for dipping.
