Start by slicing a ripe melon, such as cantaloupe or honeydew, into bite-sized cubes or wedges. The size is up to you, just make sure they are small enough to be wrapped with prosciutto later.
Take a slice of prosciutto and wrap it around each piece of melon. The salty prosciutto complementing the sweet melon is a match made in appetizer heaven.
To make the balsamic caviar, you'll need balsamic vinegar, agar-agar powder, and a syringe or dropper. In a small saucepan, heat the balsamic vinegar over medium heat. Once it starts to simmer, add the agar-agar powder and whisk until dissolved. Remove from heat and let it cool slightly before transferring the mixture to a syringe or dropper.
Squeeze the balsamic mixture out of the syringe or dropper, one drop at a time, into a bowl of cold vegetable oil. The drops will solidify into small caviar-like spheres as they set. Once all the balsamic mixture has been added, strain the caviar from the oil and rinse with cold water.
Place the Prosciutto-wrapped melon on a serving platter and top each piece with a few balsamic caviar pearls. The burst of flavor from the caviar adds a touch of elegance to this already special appetizer. Get ready for your taste buds to dance!
