Preheat your oven to 375°F (190°C) to get it nice and toasty for your croissants.
Carefully slice each croissant in half horizontally, creating a top and a bottom piece.
In a bowl, mix together 1 cup of crab meat, 1/4 cup of mayonnaise, 1/4 cup of diced celery, 1 tablespoon of lemon juice, salt, and pepper to taste. This will be our yummy filling!
Spoon the crab filling onto the bottom half of each croissant. Be generous with the filling, but make sure not to overstuff them.
Take two pitted black olives and cut them into round slices. These will be the eyes for our crabs. Place two olive slices on top of each filled croissant, positioning them to resemble eyes.
Place the filled and adorned croissants on a baking sheet and pop them into the preheated oven. Bake for about 10-12 minutes, or until the croissants are golden brown and the filling is heated through.
Once they're out of the oven, let the croissants cool for a few minutes before serving. These mini crab croissants are delightful and sure to impress!
