Start by selecting ripe, juicy tomatoes. Slice them into thin rounds, about 1/4 inch thick. Lay the tomato slices on a paper towel to absorb excess moisture.
In a small saucepan, sprinkle gelatin over cold water and let it bloom for about 5 minutes. Then, gently heat the mixture over low heat until the gelatin is fully dissolved.
Transfer the gelatin mixture to a blender or food processor. Add the tomato slices, olive oil, salt, and pepper. Blend until smooth and well combined.
Line a terrine mold with plastic wrap, leaving some overhang on the sides. This will make it easier to unmold the terrine later.
Pour a thin layer of the tomato mixture into the terrine mold. Use a spatula to spread it evenly. Repeat this process, layering the tomato mixture until the mold is filled.
Cover the terrine mold with the overhanging plastic wrap. Place it in the refrigerator and let it chill for at least 4 hours, or until the terrine is fully set.
Remove the terrine from the refrigerator. Gently lift the plastic wrap to release the terrine from the mold. Slice it into bite-sized pieces and serve with a garnish of fresh herbs.
