Mix and knead dough

In a large bowl, combine 1.5 cups of warm water, 1 tablespoon of sugar, and 2 teaspoons of salt. Sprinkle 2.25 teaspoons of active dry yeast on top and let it sit for 5 minutes until it becomes foamy. Gradually add 4.5 cups of all-purpose flour, stirring well after each addition. Once the dough comes together, turn it out onto a lightly floured surface and knead for about 5 minutes until it becomes smooth and elastic.

Shape the pretzels

Break off a small piece of dough and roll it into a long rope, about 20 inches in length. Form the rope into a U shape. Cross the ends over each other twice to create a twist in the center. Bring the ends down and attach them to the bottom of the U shape, forming a pretzel. To create different designs, twist the dough into hearts, letters, or any other shape you desire.

Boil the pretzels

In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a boil. Carefully place the shaped pretzels into the boiling water, one at a time, and cook for 30 seconds. Remove them with a slotted spoon and transfer to a baking sheet lined with parchment paper.

Bake and enjoy

Preheat your oven to 425°F (220°C). In a small bowl, whisk together 1 large egg with 1 tablespoon of water. Brush the pretzels with the egg wash to give them a shiny finish.
