In a large bowl, combine 1 lb of white fish fillets (such as cod or haddock), 1/2 cup of breadcrumbs, 1/4 cup of finely chopped onion, 1/4 cup of chopped fresh dill, 1/4 cup of milk, 1 egg, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Use your hands to mix everything together until well combined.
Using your hands, roll the fish mixture into small balls, about 1 to 1.5 inches in diameter. Place the balls on a baking sheet lined with parchment paper.
Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat. Add the fish balls to the skillet and cook for about 2-3 minutes per side, or until golden brown and cooked through. You may need to cook them in batches, depending on the size of your skillet.
In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of all-purpose flour and cook for 1 minute. Gradually whisk in 1 1/2 cups of milk until smooth. Bring the mixture to a simmer and cook for about 5 minutes, or until the sauce has thickened. Season with salt and pepper to taste.
Pour the creamy sauce over the cooked fish balls and garnish with additional fresh dill. Serve the Fiskeboller with boiled potatoes or steamed rice, and your favorite steamed vegetables. Enjoy this delicious and comforting dish with your family!
