Gather all your ingredients: 3 large eggs, 1/4 cup diced onions, 1/4 cup chopped bell peppers, 1/4 cup diced tomatoes, 1/4 cup shredded cheese of your choice, a pinch of salt and pepper, and 1 tablespoon of butter.
In a bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Season the whisked eggs with a pinch of salt and pepper and give it a quick stir.
Place a non-stick skillet over medium heat and melt the butter. Add the onions, bell peppers, and tomatoes to the skillet and sauté them until they become tender and fragrant.
Pour the whisked eggs over the sautéed veggies in the skillet. Allow the eggs to cook undisturbed for a few minutes, until the bottom sets.
Once the bottom of the omelette is set, gently fold it in half using a spatula. Let the omelette cook for another minute or so, until the cheese is melted.
Slide the omelette onto a plate and garnish it with some additional shredded cheese. Serve it hot and watch as smiles light up the breakfast table.
