In a large bowl, combine 3 cups of all-purpose flour, 1/4 cup of granulated sugar, 2 1/4 teaspoons of instant yeast, and 1/2 teaspoon of salt. Mix well. In a separate bowl, heat 1 cup of whole milk and 1/4 cup of unsalted butter until the butter melts. Let it cool slightly, then add it to the flour mixture. Stir until a soft dough forms.
Transfer the dough to a clean, lightly floured surface. Knead the dough for about 5 minutes, or until it becomes smooth and elastic. Shape the dough into a ball.
Place the dough ball in a greased bowl, turning it to coat all sides. Cover the bowl with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until it doubles in size.
In a small bowl, mix together 1/2 cup of granulated sugar, 2 tablespoons of ground cinnamon, and 1/4 cup of melted unsalted butter. Set aside.
Once the dough has risen, punch it down to release any air bubbles. On a lightly floured surface, roll out the dough into a large rectangle, about 1/4 inch thick.
Evenly spread the cinnamon filling over the rolled-out dough, leaving a small border around the edges.
Starting from one long side of the rectangle, tightly roll the dough into a log. Carefully coil the log into a large spiral shape, tucking the end underneath.
Transfer the cinnamon coil onto a baking sheet lined with parchment paper. Cover it loosely with a kitchen towel and let it rise for another 30 minutes.
Preheat your oven to 350°F (175°C). Once the coil has finished its second rise, bake it in the preheated oven for 25-30 minutes, or until golden brown. Remove from the oven and let it cool slightly.
