In a large mixing bowl, combine 2 cups of all-purpose flour, 3 large eggs, and a pinch of salt. Mix well until the dough comes together. Transfer the dough to a floured surface and knead for about 5 minutes until it becomes smooth and elastic.
Divide the pasta dough into equal portions depending on how many colors you want to use. Using food coloring, tint each portion of dough with your desired colors. Knead the dough until the color is evenly distributed. Wrap each colored dough portion in plastic wrap and let it rest for 30 minutes.
Take one colored dough portion and flatten it slightly with your hands. Dust it with flour and pass it through a pasta machine on the widest setting. Fold the dough in half and pass it through the pasta machine again. Repeat this process a few times until the dough is smooth and silky. Gradually decrease the pasta machine setting and pass the dough through each setting, until you achieve thin, uniform sheets. Repeat this step with the remaining colored dough portions.
Bring a large pot of salted water to a boil. Cook each colored pasta sheet separately for about 2 minutes, or until al dente. Remove each sheet with a slotted spoon and transfer them to a bowl of cold water to stop the cooking process. Once cooled, drain the pasta sheets and set them aside.
In a mixing bowl, combine 2 cups of ricotta cheese, 1 cup of grated Parmesan cheese, 1 beaten egg, and a handful of chopped fresh herbs like basil and parsley. Season with salt and pepper to taste. Mix until well-combined.
Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray. Start layering the pasta sheets, alternating colors, and spreading the ricotta filling in between each layer. Repeat until you run out of pasta sheets and filling. Top the lasagna with some mozzarella cheese and a sprinkle of Parmesan cheese.
Cover the lasagna with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is golden and bubbly. Once ready, let the lasagna cool for a few minutes before serving. Slice it into beautiful, colorful portions and enjoy!
