Calling all meat lovers! Our veggie lasagna is so delicious, you won't even miss the meat. It's packed with flavor and will convert even the biggest carnivores.

Caution: Prepare to experience some serious veggie lasagna addiction. Once you've tasted this, you may find yourself making it on repeat!
Start by preheating your oven to 375°F (190°C). In a large skillet, heat some olive oil over medium heat. Add chopped onions, minced garlic, and a pinch of salt. Cook until the onions are translucent and garlic is fragrant, about 5 minutes.
Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish. Then, arrange lasagna noodles over the sauce, slightly overlapping them. Next, spread a layer of the vegetable filling over the noodles. Top the filling with a layer of shredded mozzarella cheese.
Repeat the layering process until you run out of ingredients, ending with a layer of marinara sauce and mozzarella cheese on top. Feel free to get creative with additional layers of veggies like sliced zucchini, spinach, or bell peppers.
Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and continue baking for an additional 15 minutes, or until the cheese is golden and bubbly. Let the lasagna cool for a few minutes before serving. Then, dig in and savor every bite!
