In a bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of soy sauce, 1 tablespoon of honey, 1 tablespoon of lemon juice, 1 teaspoon of paprika, and a pinch of salt and pepper. This will be our delicious marinade for the kebabs.
Cut 1 red bell pepper, 1 yellow bell pepper, 1 zucchini, and 1 red onion into bite-sized pieces. Place the chopped vegetables in a Ziploc bag or a bowl, and pour the marinade over them. Make sure the marinade covers all the vegetables evenly. Let them marinate for at least 30 minutes, or longer if you can resist the mouthwatering aroma.
Now comes the fun part! Take your soaked wooden skewers or metal skewers and thread the marinated vegetables onto them. Alternate the vegetables to create a colorful and enticing presentation. Leave a little bit of space between each vegetable to allow for even cooking.
Fire up your grill or preheat your oven to 400°F (200°C). If using a grill, place the kebabs directly on the hot grill grates. Cook for about 10-15 minutes, turning occasionally, until the vegetables are nicely charred and tender. If using an oven, place the kebabs on a baking sheet lined with parchment paper and roast for about 20-25 minutes, or until the vegetables are golden and caramelized.
Carefully remove the kebabs from the skewers and place them on a plate. Sprinkle some fresh herbs like cilantro or parsley on top for extra flavor. These vegetarian kebabs are perfect as a main course or a delightful side dish. Grab a fork and dive into a world of mouthwatering goodness!
