You'll need

  • Unsalted Butter 1/2 cup
  • Granulated Sugar 2 tablespoons for the dough, 1/2 cup for coating
  • Salt 1/2 teaspoon
  • Cinnamon 1 teaspoon
  • Vegetable or Canola Oil enough to reach 2 inches in the pot
  • Ice Cream as many scoops as desired

Prepare the Churro Dough

In a medium saucepan, combine 1 cup of water, 1/2 cup of unsalted butter, 2 tablespoons of granulated sugar, and 1/2 teaspoon of salt. Bring the mixture to a boil over medium heat. Once the butter has melted and the mixture is boiling, remove the saucepan from heat. Stir in 1 cup of all-purpose flour until the mixture forms a ball. Transfer the dough to a piping bag fitted with a star tip.

Fry the Churros

Pour enough vegetable or canola oil into a large pot or deep skillet to reach a depth of about 2 inches. Heat the oil to 375°F (190°C) over medium-high heat. Carefully pipe strips of dough into the hot oil, using kitchen shears or a sharp knife to cut the dough and release it into the oil. Fry the churros for about 2-3 minutes per side, or until golden brown. Use a slotted spoon or spatula to remove the churros from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Coat the Churros

Combine 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon in a shallow bowl. Roll each churro in the cinnamon sugar mixture until coated evenly.

Make the Ice Cream Sandwiches

Allow the churros to cool slightly, then slice them horizontally to create two equal halves. Place a scoop of your favorite ice cream between the churro halves and press gently to create a sandwich.
