Start by washing and chopping the following ingredients: 1 cup of parsley, 1/2 cup of mint leaves, 1 small cucumber, 2 ripe tomatoes, and 1/4 cup of finely chopped red onion.
In a bowl, combine the chopped parsley, mint leaves, cucumber, tomatoes, and red onion. Add the juice of 1 lemon, 2 tablespoons of olive oil, salt, and pepper to taste. Mix well to combine all the flavors.
Take a whole wheat tortilla and spread a thin layer of hummus or tzatziki sauce on one side. Place a generous amount of the tabouleh mixture in the center of the tortilla.
Fold the sides of the tortilla towards the center, then roll it up tightly from one end to the other. Secure the wrap with a toothpick if needed.
