Preheat your oven to 375°F (190°C). Take one of the chilled dough disks and place it on a lightly floured surface. Roll it out into a circle large enough to fit your pie dish. Carefully transfer the rolled-out dough to the dish, gently pressing it into the bottom and sides. Trim any excess dough hanging over the edges.
Pour the cherry filling into the prepared pie crust. Dot the top of the filling with 2 tablespoons of cold unsalted butter, cut into small pieces. Take the second chilled dough disk and roll it out into another circle. You can either place the whole circle on top of the filling or cut it into strips to create a lattice pattern. Press the edges of the top and bottom crusts together to seal.
Place the assembled pie on a baking sheet to catch any drips. Bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is thick and bubbly.
