Preheat your oven to 325°F (165°C). In a large bowl, combine 2 cups of rolled oats, 1 cup of sliced almonds, 1/4 cup of chia seeds, 1/4 cup of maple syrup, 2 tablespoons of coconut oil, 1 teaspoon of vanilla extract, and a pinch of salt. Mix everything together until well combined.
Add 1/2 cup of dried tart cherries and 1/4 cup of unsweetened shredded coconut to the bowl. Give it a good stir to evenly distribute the cherries and coconut throughout the mixture.
Line a baking sheet with parchment paper. Spread the granola mixture evenly onto the prepared baking sheet. Make sure it's in a single layer, so it bakes evenly. Pop the tray into the preheated oven and bake for 20-25 minutes, or until golden brown.
Once the granola is beautifully golden, remove it from the oven and let it cool completely on the baking sheet. This will give it that irresistible crunch we all love.
