Be careful not to eat all the dough before you get a chance to bake the cookies. We know it's tempting, but trust us, the final result will be worth the wait.
In a medium-sized bowl, whisk together 2 and 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Make sure all the ingredients are well combined.
In a large mixing bowl, beat 1 cup of unsalted butter (softened) and 1 and 1/2 cups of granulated sugar until light and fluffy. This might take a few minutes, so feel free to dance around the kitchen while your mixer does the work!
To the butter and sugar mixture, add 2 large eggs and 2 teaspoons of vanilla extract. Mix everything together until well combined. Don't worry if the mixture looks a bit lumpy, it will smooth out once we add the dry ingredients.
Gradually add the dry ingredients mixture to the wet ingredients mixture. Mix on low speed until just combined. Be careful not to overmix, as it can result in tough cookies. A few flour streaks are completely fine!
Cover the dough with plastic wrap and refrigerate for at least 1 hour, or overnight if you're planning to bake the cookies the next day. Chilling the dough will help prevent spreading and give you a perfectly shaped cookie.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Take the chilled dough out of the refrigerator and let it sit at room temperature for a few minutes. Roll out the dough on a lightly floured surface to your desired thickness, usually around 1/4 inch.
Using cookie cutters of various shapes and sizes, cut out your cookies from the rolled dough. Place them on the prepared baking sheet, leaving some space between each cookie. Bake for 8-10 minutes, or until the edges start to turn golden brown.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Transfer them to a wire rack to cool completely. And now the fun part begins! Decorate your cookies with icing, sprinkles, or any other creative embellishments your heart desires.
